AVERY'S CUPCAKES

 

        My favorite traditional holiday food is my mother's cupcakes. She has name them "Avery's cupcakes because she created the recipe for my first birthday. She makes them every year for my birthday and the holidays. Although the origin is unknown, recipes for cupcakes have been printed since at least the 18th century. The first mention of the cupcake can be traced as far back as 1796, when a recipe rotation of "a cake to be baked in small cups" was written in American cookery by Amelia Simms.

        When my mom is preparing the cupcakes I love the aroma of the pineapple, strawberries and vanilla before and after they are cooked. The first step is going to the store to buy the ingredients and you will need to buy one box of Pillsbury Moist Supreme Strawberry cake mix and one box of Duncan Hines Moist Deluxe Pineapple Supreme cake mix. Then you will need two Pillsbury cream cheese frostings. Next you need one 16 oz container of strawberries and one 20 oz can of Dole pineapple tidbits. You will also need one half dozen eggs, a small bottle of canola oil, vanilla and 50 baking cups.

        At home, you will need one large bowl, 3 medium bowls, one cutting board, and one large cupcake pan.  First put both cake mixes in the large bowl. Next follow the instructions on each box and mix together. Then strain the pineapple juice in to a cup. Wash strawberries, chop and put in a bowl. Next pour pineapples and strawberries into cake mix leaving two tablespoons of each behind. Add one teaspoon of vanilla and 2 tablespoons of pineapple juice to cake mix. Follow the directions on the back of the Duncan Hines box to complete cooking process.

        While the cupcakes are baking, open both frostings and put in a bowl. You will add the remaining pineapple and strawberries to it. You will also add ½ teaspoon of pineapple juice and vanilla. Stir the frosting until all of the ingredients are mixed together. Allow the cupcakes to cool before spreading the frosting on top of each one. They are served as dessert. They are moist and I live the fresh pieces of fruit.
